This is a nice basic chef knife. It arrived well packaged and when checked for defects before use, both the blade spine and edge were unblemished and perfectly straight which you should expect. It also passed the printer-paper shredding test for sharpness without any issues such as snagging or hanging. It has some heft to the blade which provides extra cutting force and is well balanced towards the bolster with neither the blade nor handle being over-weighted. I appreciate that it has both a full tang and smooth riveting, though neither are essential or really indicative of anything quality-wise these days.The heel of the blade is not sharp to a point, but rather rounds off like the end of a butter knife. This means that it won't nick the index finger closest to it by accident when palmed close to or gripped around the bolster during vigorous chopping motions which is a nice safety feature. However, this also means that you can't run the full length of the blade through a large or very deep object such as a cantaloupe or giant head of lettuce in long single strokes which does limit it's functionality and could be a strike against it for some users.Another thing to be aware of is how shallow in depth the base of blade is. This means that if you did try dicing from tip to heel across the entire length of the blade, you end up with knuckle clearance issues contacting the cutting surface before you can lever the end of the blade through using the fulcrum of your wrist. This again means that you cannot use the whole length of the blade dependably in rapid succession.The blade's width is relatively thin which makes it suitable for delicate juliennes despite it's large size. I was able to slice thin strips of onion for sautéing easily. It also went through a large red cabbage cleanly and evenly shredded it for braising.I received this knife yesterday. My review is based on preliminary use. I do a lot of cooking and cook many meals that involve slicing, chopping, dicing, mincing, etc. Having a good knife that feels like an extension of your hand is important. It makes these actions quick, precise and intuitive. The Nourish German Steel Professional Chef Knife feels like part of you. What really impresses me is the quality and craftsmanship you get for the price point. Though I wouldn't use this for mincing, I have used it for slicing, chopping, and dicing already -- yes, even though I've had it for just one day. So far, I am impressed. I recommend a brief sharpening with every use of a professional knife; just one or two swipes on each side. I would also recommend handwashing this knife, drying it, then immediately storing it in a wood knife block or a wood magnet hanging utensil.What my review cannot cover obviously is how it holds up with time. Should I have any indication that it would not do well over time, I will edit this review. Also, I have not used it for carving meat or for dissecting chicken etc. However, I believe this knife would be suitable for these uses as well.UPDATE: I have owned the knife for a few months. I can provide more information. It seems to hold up well. I recommend a few swipes on the sharpener between uses. You can easily cut through tomatoes, chicken, carrots, etc. It’s dynamic. I also impressed myself when I threw an orange in the air and sliced it perfectly in half. With a dull knife, the orange would have been knocked forward instead of chopped. Definately hand wash and immediately dry. Store safely because it’s very sharp.I can be tough on cookware and especially cutlery. I was in the market for a new chef's knife and for $25, I couldn't pass this deal up. I'm glad I didn't!The knife comes well packaged, typical of all Greater Goods products. Earth-friendly cardboard that securely holds the knife in place to prevent damage while shipping.The first thing you'll notice is how great it feels in your hand. It's well-balanced, easy to maneuver and feels better than some of the more expensive chef's knifes I've tried. Pulling it out of it's sheath, I heard a nice "shink" note from the well-crafted German steel blade.I've been disappointed with the sharpness and accuracy of some knives I've gotten, having to sharpen them before actually using them and that's not the case here. The edge from the factory is perfect. A nice thick sirloin was no match for it, and it cut a tomato paper thin.I'm interested to see how it will hold up over time (and I will update this review down the road) but my initial impression is that for this price, you'll be glad you got one!Presentation:The packaging for my order was very well protected. I like the cardboard sleeve around the blade for secured protection. The blade itself had a gorgeous shine of steel and appeared to be sturdy.Use:The weight of the knife product was not too heavy, nor too light. It's larger than the standard sanktoku knife I use on a daily basis. It took a bit a getting used to it but after a few chops, the easier the transition. The cut itself is very sharp so definitely had to pay attention to what I was doing! It worked very well on rough chops. (Used it on zucchini and mushrooms). For smaller food items like grape tomatoes or limes, I will probably switch to a smaller knife. The width of the blade will probably work great for cuts on spaghetti squash or acorn squash. Look forward to trying it on watermelon this summer!Storage/Cleaning:It was easy to hand wash and appreciate the handle is not too shallow where food particles can get attached to. its easy to store, thankful for the plastic chip for the tip of the knife.Overall this product exceeded my expectations. I'd be more than happy to recommend this to others. I would definitely purchase a smaller knife if available. I would lessen the width of the blade as effort to reduce the weight of the product.
